Ingredients:
- 1 cup of roasted chana dal
- 1/2 cup of peeled Garlic
- 5 red chilies
- 1 teaspoon of peanuts
- 1 teaspoon of coriander seeds
- 1 teaspoon of Jeera
- 2 teaspoons of amchur powder
- Salt as needed
- 5 teaspoons of oil
- 15 small eggplants
Steps to prepare:
- On a pan Dry Roast Chana dal, garlic, red chilies, peanuts. Add coriander seeds and Jeera.
- Allow the ingredients to cool down. Grind the ingredients and keep it aside.
- Add Amchur powder and salt to the grinded mixture.
- Taste and make sure spice levels are enough.
- Adjust spices based on spice levels.
- Now, slit eggplants in the middle and stuff eggplants with the powder.
- Repeat the same for the rest of the eggplants.
- Now, on a pan put oil. Add stuffed eggplants.
- On low flame, slowly fry eggplants. This would take some time.
- Stuffed eggplant fry is ready for serving. Serve it with hot rice.
